How Easter and springtime boosts the pastry industry

Easter, bank holidays, and the arrival of spring with longer, slightly warmer days, sprinkle April with a new spirit. These factors are a cue to gather friends and family around the table, and sweets are naturally at the centre of those moments. For baking businesses, April is therefore less about a single Easter Sunday spike and more about sustaining demand across several weeks of food, gatherings and celebrations. It's a month where sweet pastries can shine across multiple occasions: breakfast, brunch, afternoon treat and dessert.

Easter remains the anchor, but its expression in baking has broadened well beyond traditional hot cross buns. In recent years, bakeries have experimented with hybrid formats such as hot cross bun croissants and buns with indulgent fillings. These work as breakfast, mid morning treats, and even dessert, making them highly versatile. Limited edition lines can run from the pre Easter build up, shifting the narrative from purely religious symbolism to a broader theme of 'spring treats'.

Bank holidays and school breaks add another layer of opportunity. Families on day trips, visitors in city centres and tourists all contribute to higher footfall for the grab and go pastry. Here, sturdier formats like the pastel de nata come into their own. Positioning these items near hot drinks encourages impulse purchases from customers who might not have set out to buy pastry but are easily tempted by the aroma or display.

Brunch culture amplifies this trend. As temperatures increase and sunny days become more frequent, outdoor spaces will start to fill up. For businesses, this opens space for bundle deals – pastry boxes, or combined offers with coffee and a drink – that drive volume while keeping perceived value high. Other consumers will look for café style experiences at home. April is an ideal time to promote pastry as part of a relaxed, shareable spread. Mini pastries work particularly well for office functions, picnics, and other informal gatherings.
